The Indian summer is drawing to a close, and although the weather is still sunny, winter is inexorably approaching, and it’s time to take in the last of the summer clothes and bring out the winter outfits. However, in this period that I never look forward to with great joy, one thought comes to mind and delights me: it’s the start of Raclette season.
A great cheese lover and always interested in new discoveries, I’ve already enjoyed the creations of Laiterie de Paris, a cheese dairy that makes and matures its cheeses in the Château Rouge district of Paris (18th arrondissement).
I’ve always loved their flavored fresh goats’ cheeses (especially the yuzu-flavored one and the one wrapped in a Japanese cherry leaf, sakura), their Brie with nuts or dried fruit, and their different versions of Raclettes.

When I saw 2 weeks ago that they had launched CBD Raclette, I immediately went there, because knowing that everything is produced on site in their workshop in limited quantities, I had to be quick.
So I was able to bring back some of this precious CBD Raclette to enjoy with a few friends.
This Raclette was prepared by cutting the whole wheel into two pieces, sprinkling with CBD leaves, some of which had been oven-dried beforehand, then resealed and left to mature for a few days.
Once sliced, it looks like Morbier from a distance, but up close the CBD aroma is present. It will be served with potatoes, gherkins, cold meats, the whole classic panoply.
I choose a few sakés, which easily replace white wines, and my friends honor them, a pairing that works perfectly.

The Raclette is excellent, and the CBD adds a very pleasant herbaceous aroma.
The experience is more than conclusive; we would gladly have eaten more, but I had bought everything left in stock at the store.
We promise to do it again very soon, while the sake contributes to the euphoria.
So if you too want to tackle winter in good spirits, I can only recommend this CBD Raclette from the Laiterie de Paris. Call ahead to check availability, and don’t forget to serve it with sake.
